Ingredients
4 c. cubed watermelon
2 c. cubed cucumbers
1-1/2 c. cubed feta cheese
1/2 c. whole kalamata olives
1/4 c. minced fresh parsley
1/4 c. minced fresh mint
1/2 red onion, thinly sliced
1/4 c. olive oil
2 T. red wine vinegar
Kosher salt, to taste
black pepper, to taste

In a large bowl, add watermelon, cucumbers, feta cheese, kalamata olives, parsley, mint and red onion.
In a small bowl or mug, whisk together olive oil and red wine vinegar; pour over watermelon mixture; stir to combine. Season to taste with salt and pepper. Refrigerate until ready to serve.
