Elevate those frozen french fries to a new level with a little truffle oil, truffle salt and garlic. Then serve them with a wonderful truffle mayonnaise that is a must to try.
1 head garlic
olive oil
14 oz. frozen french fries (about half of bag)
½ c. mayonnaise
¼ t. salt
1 T. truffle oil (available in specialty stores or online)
grated Parmesan cheese
truffle salt (available in specialty stores or online)
Roasted Garlic:
Preheat oven to 375 degrees.
Cut the top off a head of garlic to expose the cloves; drizzle with olive oil; sprinkle with salt and pepper. Wrap completely in aluminum foil; place on a baking sheet. Bake for 45 minutes. Remove from oven to cool. Once cool enough to handle, turn garlic over; squeeze out cloves; chop finely; set aside.
Fries:
Prepare fries according to package directions. Once done baking, remove from oven; immediately coat with grated Parmesan cheese and truffle salt, coating generously.
Truffle Mayonnaise:
In a small bowl, whisk together mayonnaise, grated garlic and salt. Drizzle in truffle oil; whisk until combined and smooth.
Serve fries with mayonnaise.
