Even people who aren't crazy about cauliflower or vegetables will love these yummy cauliflower bites. They're roasted until they are golden brown in the oven with an Italian breadcrumb, garlic and Parmesan cheese breading. Serve with a dipping sauce like
1/2 c. butter melted
2 garlic cloves, minced
1 c. Italian or plain breadcrumbs
1/2 c. grated Parmesan cheese
1/4 t. salt
1/4 t. black pepper
1 medium cauliflower head
Preheat oven to 400 degrees. Line a large baking sheet with parchment paper; set aside.
Wash cauliflower; drain and dry; cut cauliflower into florets, all about the same size, cutting large florets into halves, if needed.
Place butter in a small bowl, microwave until melted; add garlic; stir.
Place breadcrumbs, salt, pepper and Parmesan cheese in another bowl.
Dip each cauliflower floret first into the butter, then into breadcrumbs; place each piece onto the prepared baking sheet.
Roast for 32 - 35 minutes, or until the breading is golden brown.
6 servings.
*You could also pour the melted butter over cauliflower florets into a bowl and toss gently to coat, then sprinkle with breading mixture and stir to coat.
