These delicious potatoes make a fantastic side dish to go along with just about any entree. They are crisply roasted in your oven with garlic, Parmesan cheese, olive oil, lemon juice and fresh thyme.
5 white potatoes, scrubbed and cut into wedges
1/2 c. Parmesan cheese
2 cloves garlic, minced
1/3 c. extra virgin olive oil
2 T. freshly squeezed lemon juice
2 sprigs thyme, leaves only (or about 1/2 t. dried thyme)
salt and pepper, to taste
Preheat oven to 325 degrees.
Spread wedged potatoes in a well greased 9×13 inch baking pan.
In a bowl, whisk together the remaining ingredients; pour over the potatoes.
Bake for 45 minutes, turning several times during baking time to bake evenly.
Serve hot.
