There are times when you just need an easy, quick to prepare salad that is healthy, delicious and versatile. This one is the one. It can be served as a salad, in a wrap, as a side dish or a meat topping.
15 oz. can black beans, rinsed and drained
15 oz. can chickpeas/garbanzo beans, drained
15 oz. can diced tomatoes, undrained
15 oz. can corn, drained
4 oz. can diced green chiles
1 red onion, chopped
1 green bell pepper, seeded and chopped
1 jalapeño pepper, diced, optional
1/4 c. chopped fresh cilantro or chopped celery leaves
freshly squeezed juice from 2 limes
1/4 c. olive oil
salt and pepper, to taste
avocado slices, for garnish
Combine all ingredients except for the avocado in a large bowl; mix well; cover; refrigerate until ready to serve.
Garnish with avocado slices just before serving.
