Mediterranean Pasta Salad with Tuna

Description

Sometimes you just need a quick meal but still want it to be super healthy. This pasta salad has protein, carbs and lots of beautiful veggies. You probably have many of the ingredients already in your pantry, so don't wait to make it.

Ingredients

1/2 lb. bow tie pasta
1/2 c. marinated artichoke hearts, chopped
1/2 c. marinated peppers
1/2 c. cucumber, cut into small dice
1/2 c. cherry or grape tomatoes, halved or quartered
1/2 c. radicchio, shredded
1/4 c. black olives
1/4 c. green olives
1/4 c. diced red onion
14 oz. white beans, drained and rinsed
6 oz. can good quality albacore tuna, drained
2 hard cooked eggs, quartered
handfuls of fresh basil and thyme leaves
salt and freshly ground black pepper, to taste

Cook pasta to al dente, about 2 minutes less than package directions of 8-15 minutes; drain.

Whisk dressing ingredients together while pasta is cooking; toss hot, drained pasta with a bit of the dressing. Add the remaining ingredients to the bowl with the pasta; toss with more dressing, to taste.

Serve garnished with fresh herbs.

8 servings.

*Variations: Make it vegetarian by omitting the tuna, then add some feta cheese for some protein. Or, prepare it with chicken or shrimp. It could also be made low-carb and gluten free by omitting the pasta and serving it over greens.
