Ingredients
- Meatballs:
- 1/3 c. packed fresh parsley
- 1/4 c. diced yellow onion
- 2 T. olive oil
- 1 T. lemon zest
- 4 cloves garlic
- 3-5 dried bird eye chilies
- 1 - 1/2 lb. (80/20) ground beef
- 1 large egg
- 2 T. panko breadcrumbs
- 2 t. kosher salt
- 1 t. smoked paprika
- 3/4 t. cumin
- 1/2 t. oregano
- Yogurt Sauce:
- 10 oz. container Sabra crisp bell pepper Greek yogurt dip
- 2 T. finely diced English cucumbers
- 1 T. freshly squeezed lemon juice
- 1 t. lemon zest
Steps
- Meatballs:
- Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper or a silpat liner; set aside.
- In a food processor, add parsley, onion, olive oil, lemon zest, garlic and chilies; blend until all ingredients are broken down and paste-like in texture.
