Need a quick, delicious dinner? Try this 5 ingredient chicken roll casserole that's ready for the table in less than 45 minutes. Serve it with a side salad and perhaps your favorite veggie.
2 c. cooked, diced chicken (rotisserie chicken is a great option)
8 oz. tube refrigerated crescent roll dough
2 c. chicken stock/broth
10.75 oz. can condensed cream of chicken soup (do not dilute)
1 c. grated Cheddar cheese or your favorite
Preheat oven to 350 degrees. Spray an 8 x 8 inch baking dish with non-stick cooking spray; set aside.
In a saucepan over low heat, stir together chicken stock/broth, cream of chicken soup and cheese' warm over low heat, whisking constantly, just until cheese melts and sauce is combined. Remove from heat BEFORE the sauce boils.
Unroll crescent roll dough; separate into 8 triangles. Place about 1 T. chicken in the center of each crescent roll; roll dough up; place each roll in the bottom of the prepared dish. Sprinkle remaining chicken on top of the rolls. Pour soup mixture over everything.
Bake, uncovered, for about 30 minutes, or until crescent rolls are browned on top and sauce is bubbly.
Makes 8- about 4 servings.
