Grilled Brussels Sprouts With Bacon and Shallots

Description

Think that you don't like Brussels Sprouts? Think again. These are made with shallots for some sweetness and some bacon which adds wonderful flavor. Cook them on the grill. Yum.

Ingredients

1/3 lb. thick cut bacon, cut into 1/2-inch dice
1 1/2 lb. fresh Brussels sprouts
2 medium shallots, thinly sliced
Kosher salt
freshly ground black pepper

Fill a medium saucepan with water; bring to a boil over high heat; add 1 T. salt; add Brussels sprouts; cook for 5 minutes; drain; set aside.

Place bacon in a 10 inch skillet over medium-high heat; cook until fat renders and bacon crisps; drain bacon on a paper towel lined plate; move bacon to a large bowl; remove all bacon fat from skillet except for 1 T. Add shallots to skillet; cook until lightly browned; transfer to the bowl with the bacon.

Preheat grill.

Place Brussels sprouts in a large bowl; toss with reserved bacon fat; season with salt and pepper, to taste.

Place sprouts on the preheated grill; cook until lightly charred on each side, about 4 - 5 minutes per side.

Transfer sprouts from grill to the bowl with bacon and shallots; toss to combine in a serving dish.

Serve immediately.
