Description
One pan dinners are always a hit and this one will be too. It's quick to prepare and clean up is a snap. Make it even healthier with turkey or chicken smoked sausage.
Ingredients
- 2 c. red potato, small cubes
- 12 oz. green beans
- 1 large head broccoli
- 1 1/2 c. chopped bell peppers from 2 large or 6-7 mini sweet bell peppers
- 9 oz. smoked sausage, your favorite (not ground sausage)
- 3-6 T. olive oil
- 1/4 t. red pepper flakes, optional
- 1 t. paprika
- 1/2 t. garlic powder
- 1 T. dried oregano
- 1 T. dried parsley
- 1/8 t. salt, optional
- 1/4 t. pepper
- Optional: freshly grated Parmesan cheese, fresh parsley, quinoa or rice
Steps
- Preheat oven to 400 degrees. Line a large sheet pan with foil or parchment paper.
- Chop potatoes into fairly small pieces so they'll be tender; trim end off of the green beans, then cut into halves; chop broccoli; chop peppers into thick squares; coin the sausage in thick slices.
- Place all veggies and sausage on the prepared sheet pan; pour on the olive oil and all of the spices over the top; toss to evenly coat all ingredients.
