When it's apple picking time, you want great recipes to use all of those juicy, delicious apples. This one is a keeper that you can use year round, not just in the fall.
Crust:
1/2 c. hot water
1/2 T. instant yeast
2 T. brown sugar
1 T. olive oil
1/2 t. salt
1 1/2 c. all-purpose flour
Apple Filling:
2 1/2 c. apples, peeled and finely diced
2 T. flour
2 T. brown sugar
1/2 t. cinnamon
1/4 t. nutmeg
Streusel:
1/2 c. flour
1/2 c. cold butter
1/3 c. brown sugar
1/2 c. oatmeal
caramel sauce to drizzle on top
ice cream, for serving
Crust:
Combine hot water and yeast in a large bowl; let sit for a few minutes until a foam develops; stir in the brown sugar, olive oil, salt and flour; knead for a few minutes until dough is stretchy. Let sit for 30 minutes to rise.
While dough is rising, peel and dice the apples; toss with flour, brown sugar, cinnamon and nutmeg.
Preheat oven to 400 degrees. Grease and lightly dust a pizza pan with cornmeal.
Pat out the dough into a 12 - 15 inch circle; lightly brush with olive oil. Spread the apples on top of the dough.
Streusel:
Mix together the flour and brown sugar; cut in the cold butter until it makes pea-sized crumbs; gently stir in oatmeal. Sprinkle over the apples.
Bake for 22-28 minutes or until apples are tender and the crust is browned. Let cool slightly.
Serve warm with caramel sauce and vanilla ice cream, if desired.
