It's that time of year to enjoy this seasonal favorite. It is really easy to prepare, it's delicious and there's no corn syrup in this delicious snack.
10 c. popped popcorn
salt, to taste
1 c. sweet cream salted butter
1 c. light brown sugar
2 t. vanilla
1/2 t. baking soda
Pop the popcorn; salt, to taste; set aside.
Melt butter in a medium saucepan over medium heat; add brown sugar; stir until thoroughly mixed. Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat. When it reaches a boil, allow to cook for 5 minutes WITHOUT stirring on medium heat. Add vanilla at the 4 minute mark; stir to mix. Continue to boil for 1 additional minute; add baking soda.
Drizzle caramel mixture over the popcorn, using a spoon, gently fold the popcorn and the mixture until all kernels are covered. Pour popcorn onto a cookie sheet that has been covered with aluminum foil or a silpat liner. Allow the popcorn cool.
Serve.
