Nostalgic for old recipes? Try this retro Southern gelatin salad from the 60's this holiday season. It's prepared with cherry Jello, red tart cherries, crushed pineapple, pecans and Coco-Cola. It's surprisingly good.
6 oz. cherry-flavored Jello (NOT sugar-free)
1 c. boiling water
10 oz. regular Coca-Cola
14.5 - 16 oz. can red tart pitted cherries in water
8 oz. can crushed pineapple
1 c. chopped pecans, raw or lightly toasted
whipped topping, optional
Place the Jello in a large bowl; pour the boiling water over Jello; stir until dissolved; stir in the Coca-Cola. Refrigerate mixture until partially firm, about 30 minutes, checking and stirring every 3 - 5 minutes. It should be thickened, but not set!
Place the cherries and its juice in a food processor that has been fitted with a knife blade or in a blender. Pulse or blend a few times to lightly chop the cherries.
Once the Jello mixture has thickened, stir in the pecans, the chopped cherries and its juice and the pineapple and its juice. Pour into a gelatin mold. *
Refrigerate until set or overnight. When ready to serve, remove salad from the mold by inverting it onto a serving platter. Serve cold, garnished with whipped topping, if desired.
12 servings.
*If you do not have a Jello or gelatin mold, just leave it in the large bowl and invert it onto a serving dish when ready to serve.
