The perfect fall side dish is easy to make. It has just a few ingredients and in less than an hour, you can serve a delicious dish that is good enough for a holiday dinner.
2 whole butternut squash, halved and seeded
6 T. butter, cut into pieces
1/4 c. pure maple syrup
dash of salt
ground cinnamon, for sprinkling
Preheat oven to 375 degrees.
Place the squash halves, cut side down, on a baking sheet. Roast for 30-40 minutes or until fork-tender.
Scoop out the innards into a bowl; add butter, syrup and salt; mash with a potato masher or puree with a food processor. Spread into a small casserole dish. Sprinkle with cinnamon.
Keep warm in the oven until serving.
