Transform boring green beans into a casserole that is so delicious and packed with so much flavor you can serve it at holiday meals but easy enough to serve anytime.
1 1/2 lb. fresh French green beans, halved, ends removed (or 2 cans green beans, rinsed and drained)
10 oz. mozzarella cheese, grated
1 c. sour cream
1/4 white onion, finely chopped
3 T. unsalted butter
2 T. all-purpose flour
1/2 t. garlic powder
kosher salt, to taste
freshly ground pepper, to taste
Preheat oven to 400 degrees. Set up a large bowl of ice water next to the workstation.
Bring a large pot of well salted water to a boil; add green beans; cook 4-6 minutes, or until bright green and tender-crisp. Transfer green beans to the ice bath to stop from cooking; drain; place in a large 11x7 baking dish.
Melt butter in a medium skillet over medium heat; saute onion until softened, about 4 minutes. Stir in flour and garlic powder; cook for 1 minute, stirring until smooth. Season with salt and pepper, to taste. Mix in sour cream; cook until mixture just begins to boil.
Pour sour cream mixture over green beans; mix until everything is thoroughly coated; sprinkle mozzarella cheese over the top.
Bake for 20-22 minutes, or until cheese is melted and bubbly. Remove from oven. Let cool 5 minutes before serving.
6-8 servings.
