These muffins won't last long in your house. They are easy to make, have just 5 ingredients and taste just like a pecan pie. Serve them warm with a scoop of ice cream, if desired.
1 c. packed light brown sugar
1/2 c. all-purpose flour
1 c. chopped pecans
2/3 c. butter, softened
2 eggs, beaten
Preheat oven to 350 degrees. Grease or spray and flour 18 mini muffin cups or line cups with paper muffin liners.
In a medium bowl, stir together brown sugar, flour and pecans.
In a separate bowl, beat the butter and eggs together until smooth; stir into dry ingredients just until combined. Spoon the batter into the prepared muffin cups until the cups are about 2/3 full.
Bake for 20 - 25 minutes. Cool on wire racks when done.
