Description

These muffins won't last long in your house. They are easy to make, have just 5 ingredients and taste just like a pecan pie. Serve them warm with a scoop of ice cream, if desired.

Ingredients

• 1 c. packed light brown sugar
• 1/2 c. all-purpose flour
• 1 c. chopped pecans
• 2/3 c. butter, softened
• 2 eggs, beaten

Steps

1. Preheat oven to 350 degrees. Grease or spray and flour 18 mini muffin cups or line cups with paper muffin liners.
2. In a medium bowl, stir together brown sugar, flour and pecans.
3. In a separate bowl, beat the butter and eggs together until smooth; stir into dry ingredients just until combined. Spoon the batter into the prepared muffin cups until the cups are about 2/3 full.
