Want a dessert that is a crowd pleaser? This one is definitely it. It's simple to prepare and is a decadent combination of peanut butter, marshmallow fluff, chocolate and Peanut Butter Cups.
1/2 c. butter, softened
1/3 c. peanut butter
1 c. packed brown sugar
1 egg
1 t. vanilla extract
1 1/4 c. all-purpose flour
9-12 Reeses Cups, regular size (NOT fun size)
2/3 c. chocolate chips
7 oz. container marshmallow creme
Preheat oven to 350 degrees. Line an 9 x 9 inch baking pan with parchment paper, allowing the parchment paper to hang over all the edges of pan, to allow bars to be pulled out of the pan later.
Peanut Butter Fluff Dough:
Combine the butter and sugar in a large bowl; beat until light in color and fluffy consistency, about 3 minutes. Add the egg, peanut butter and vanilla; mix. Add the flour; mix until well combined. Fold in chocolate chips. (Could also toss in a few chopped up Reese's cups for extra chocolate and peanut butter.)
Fluffernutter Bars:
Press about 2/3 of the dough into the bottom of the baking pan. Unwrap and place peanut butter cups evenly over the dough. Spread the marshmallow creme over the layer of peanut butter cups. Cover with the remaining dough; gently press to spread evenly.
Bake for 25 minutes until the crust starts to turn golden brown. Remove from oven, keeping bars in the pan for 1 hour, which allows them to slowly cook a little more until they cool to room temperature.
Remove the bars from the pan by pulling up on the parchment paper. Place on a wire cooling rack. Allow to cool fully, until set, before slicing.
