You can never have to many desserts or snacks for the holidays. You'll be glad to have this quick and easy one to serve to guests or to take to a holiday gathering.
6 c. Rice or Corn Chex
1 c. light corn syrup
1 c. sugar
1 1/2 c. peanut butter
2 c. semi-sweet chocolate chips
2 c. butterscotch chips
1/2 c. peanut butter
1 t. vanilla
Grease/spray or butter a large round bowl; pour in the cereal; set aside.
Grease/spray a 9x13 inch pan; set aside.
Combine the corn syrup and sugar in a small saucepan over medium-high heat; stir until it comes to a boil; immediately remove from heat; stir in 1 1/2 c. peanut butter; immediately pour mixture over cereal; fold in; pour into the 9x13 pan.
In a microwaveable 4 c. measuring cup, combine butterscotch and semi-sweet chocolate chips, 1/2 c. peanut butter and vanilla; microwave in 30 second intervals, making sure to stir very well after each interval until completely melted and smooth., taking about 1 minute and 30 seconds. Pour over the bars; allow to cool completely at room temperature before cutting.
12-15 servings.
