Do you want to serve cranberries during the holidays but don't want to serve it out of a can? Try this interesting and amazing appetizer instead. It's made with fresh cranberries, green onions, fresh cilantro, fresh ginger and the surprise ingredient, jal
12 oz. fresh cranberries
1/4 c. sliced green onions
2 jalapeños, minced
1/4 c. fresh cilantro leaves, minced
2 T. finely grated fresh ginger
2 T. freshly squeezed lemon juice
1/2 c. sugar
Rinse, drain, and discard cranberries that are soft or bruised. Place cranberries in a food processor or blender; pulse until finely chopped, but not mushy; place in a bowl; mix together with green onions, jalapeños, cilantro leaves and ginger. Pour lemon juice and sugar over everything; stir together.
Cover with plastic wrap; refrigerate, allowing flavors to develop. It will be a little tart to start, but as will develop even more flavor after sitting.
It can be served as a plain salsa but is amazing served over cream cheese with crackers.
