Although these mashed sweet potatoes make a great side dish for the holidays, they would also be a great addition to any dinner. They're delicious and sweet and easy to make. They can be on your table in as little as 30 minutes.
3 - 4 lb. sweet potatoes, peeled and cubed
1/2 c. salted butter
1/4 c. honey
1/2 t. ground cinnamon
1/3 c. milk
1/4 t. salt, optional
Place cubed sweet potatoes into a large pot filled with enough water to cover the potatoes. Place over high heat on the stove; bring to a boil. When boiling, reduce heat to low; simmer until tender, about 15-20 minutes. Drain.
While hot, transfer sweet potatoes to a large mixing bowl. Add in butter, honey, cinnamon and milk; mash using a potato masher or a hand mixer until smooth and well combined.
Serve hot.
