Description
It's the season for parties, guests and gatherings and you'll need something to feed those hungry friends. Make these addictive little gems and celebrate how delicious they are.
Ingredients
- 8 oz. block cream cheese, softened
- 2 T. sour cream
- 2/3 c. shredded mozzarella cheese
- 1/4 c. freshly grated Parmesan cheese
- 1/2 c. canned artichoke hearts, drained and chopped
- 1/2 c. frozen spinach, drained and chopped
- 2 cloves garlic, minced
- pinch crushed red pepper flakes
- kosher salt, to taste
- freshly ground black pepper, to taste
- 3 medium zucchini, cut into 1/2 inch rounds
Steps
- Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
- In a large bowl, combine cream cheese, mozzarella and Parmesan cheeses, artichokes, spinach, garlic and crushed red pepper flakes; season with salt and pepper, to taste. Spread about 1 T. of cream cheese mixture on top of each zucchini coin.
- Bake until zucchini is tender and cheese is melty, about 15 minutes. If wanting more color, broil on High for 1-2 minutes.
