It's the season for parties, guests and gatherings and you'll need something to feed those hungry friends. Make these addictive little gems and celebrate how delicious they are.
8 oz. block cream cheese, softened
2 T. sour cream
2/3 c. shredded mozzarella cheese
1/4 c. freshly grated Parmesan cheese
1/2 c. canned artichoke hearts, drained and chopped
1/2 c. frozen spinach, drained and chopped
2 cloves garlic, minced
pinch crushed red pepper flakes
kosher salt, to taste
freshly ground black pepper, to taste
3 medium zucchini, cut into 1/2 inch rounds
Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
In a large bowl, combine cream cheese, mozzarella and Parmesan cheeses, artichokes, spinach, garlic and crushed red pepper flakes; season with salt and pepper, to taste. Spread about 1 T. of cream cheese mixture on top of each zucchini coin.
Bake until zucchini is tender and cheese is melty, about 15 minutes. If wanting more color, broil on High for 1-2 minutes.
