Ginger Ale Cake with Ginger Frosting

Description

This ginger cake is perfect for special occasions and holidays. It has a bold, strong ginger flavor from the ginger ale and freshly grated ginger that everyone will love.

Ingredients

Cake:
½ c. unsalted butter
1 c. sugar
2 large eggs
½ c. full fat sour cream
1 T. freshly grated ginger
1/2 c. ginger ale
1 t. vanilla extract
2 c. all-purpose flour
½ t. ground cinnamon
1/8 t. ground nutmeg
1/8 t. ground cloves, optional
½ t. baking soda
¼ t. baking powder

Ginger Frosting:
1 c. shortening
½ c. unsalted butter
2 T. freshly grated ginger
½ t. ground cinnamon
1 T. Meringue powder, optional-for stability
1/2 c. ginger ale
6-8 c. powdered sugar

Maraschino cherries or white edible pearls and cinnamon candy balls, for garnish

Preheat oven to 350 degrees. Grease and flour 3 round cake pans (8x2 inches each)

Cake:
In a large mixing bowl, cream butter and sugar. Add eggs; mix until just combined. Add sour cream, freshly grated ginger, ginger ale and vanilla extract; mix until smooth. Add flour, cinnamon, nutmeg, cloves, baking soda and baking powder; mix until just combined. This batter will be thick, so don't over-mix or try to thin it out. Pour batter into prepared cake pans.

Bake for 25 minutes or until a wooden toothpick inserted in the comes out clean.

Frosting:
In a mixing bowl, add shortening and butter; mix until fluffy.

Add fresh ginger, cinnamon, meringue powder, ginger ale and mix again. Add powdered sugar, 1 c. at a time, while constantly mixing. After adding 6 c. powdered sugar, check to see if it has the desired consistency. The frosting should be creamy but thick so that it can sufficiently hold the weight of the layered cake. If it's too soft, add more powdered sugar and mix again.

Assembly:
Use a sharp serrated knife to cut the sides of the 3 cakes.

Place one of the cakes on a cake stand. Fill a piping bag with the frosting; attach Tip #4B. Hold the bag at a 90 degree angle and pipe little stars of frosting on top of the cake.

Place another cake on top of the frosted cake. Hold the piping bag at a 90 degree angle again. Pipe little stars of frosting on top of the cake.

Place the last cake on top of the frosting. Hold the piping bag at a 90 degree angle again. Pipe little stars of frosting on top of the cake.

Garnish the top of the cake with the desired garnish.
