This ginger cake is perfect for special occasions and holidays. It has a bold, strong ginger flavor from the ginger ale and freshly grated ginger that everyone will love.
Ingredients
- Cake:
- ½ c. unsalted butter
- 1 c. sugar
- 2 large eggs
- ½ c. full fat sour cream
- 1 T. freshly grated ginger
- 1/2 c. ginger ale
- 1 t. vanilla extract
- 2 c. all-purpose flour
- ½ t. ground cinnamon
- 1/8 t. ground nutmeg
- 1/8 t. ground cloves, optional
- ½ t. baking soda
- ¼ t. baking powder
- Ginger Frosting:
- 1 c. shortening
- ½ c. unsalted butter
- 2 T. freshly grated ginger
- ½ t. ground cinnamon
- 1 T. Meringue powder, optional-for stability
- 1/2 c. ginger ale
- 6-8 c. powdered sugar
- Maraschino cherries or white edible pearls and cinnamon candy balls, for garnish
Steps
- Preheat oven to 350 degrees. Grease and flour 3 round cake pans (8x2 inches each)
- Cake:
- In a large mixing bowl, cream butter and sugar. Add eggs; mix until just combined. Add sour cream, freshly grated ginger, ginger ale and vanilla extract; mix until smooth. Add flour, cinnamon, nutmeg, cloves, baking soda and baking powder; mix until just combined. This batter will be thick, so don't over-mix or try to thin it out. Pour batter into prepared cake pans.
