This three layer cake is literally made with Milky Way candy bars melted into the batter. It's then frosted with an icing of milk chocolate and marshmallow cream along that perfectly finished this luscious cake.
Cake:
8 regular sized Milky Way candy bars, unwrapped
1 1/2 c. from 3 sticks butter, at room temperature, divided
2 c. sugar
4 large eggs, well-beaten
2 1/2 c. all-purpose flour
1/2 t. baking soda
1 1/4 c. buttermilk
1 t. vanilla extract
Frosting:
2 1/2 c. sugar
1 c. evaporated milk
1/2 c. from 1 stick butter
1 c. marshmallow cream
6 oz. milk chocolate chips
Cake:
Preheat oven to 325 degrees. Grease and flour three 9 inch cake pans.
In a double boiler, melt candy bars with 1/2 c. butter. As candy and butter are melting, they'll begin to look almost curdled, but will eventually come together into a smooth consistency. Remove from heat; let cool.
In a large bowl, use an electric mixer to combine the remaining 1 c. butter with the sugar; mix in well-beaten eggs and cooled chocolate mixture.
Sift flour and baking soda together; alternately mix in flour and buttermilk to the batter, blending well; add vanilla.
Divide batter evenly between the 3 cake pans, filling each no more than halfway. Bake 30 - 40 minutes, or until a wooden toothpick inserted in the center comes out clean. I(f there is extra batter, make a few cupcakes.)
Frosting:
Combine sugar and evaporated milk in a medium saucepan; cook to a soft-ball stage*; remove from heat; add butter, marshmallow cream and chocolate chips, stirring until all have melted.
Place 1 layer of cake on a platter; frost the top, letting the frosting spill over the sides a bit. Add a second layer of cake on top of the first; frost like the first layer. Add the third layer of cake on top; frost with the remaining frosting. The sides of the cake will be mostly naked and the frosting is just spread on top of each layer with a few drips down the side.
12 servings.
*Soft ball stage tip:
At this temperature, sugar syrup dropped into cold water will form a soft, flexible ball. When removing the ball from water, it will flatten like a pancake after a few moments in your hand.
