Everyone will be asking for this recipe after they take one bite. It's so delicious and easy to make. It can be served as an appetizer or as part of the meal.
30-36 inch French baguette
6 oz. whipped or extra creamy goat cheese*
4-6 T. spicy pepper jam or cranberry pepper jam
2 oz. arugula
1 lb. deli ham, very thinly sliced (or leftover ham)
Slice bread horizontally in half lengthwise, forming 2 flat halves. Spread goat cheese onto each section of bread; layer arugula on the bottom half; arrange folded/rolled ham evenly over the greens, forming piles of ham across the bread to create the best texture. Spoon jam over the goat cheese on the top half of the bread. Close; slice into 4- sections.
Serve immediately.
4 main servings or 8 appetizer servings.
*This sandwich could also be made with whipped cream cheese, but the cream cheese won't have the same depth of flavor as the goat cheese.
