White Chocolate Truffle Snowmen

Description

Tis the season to have holiday parties and gatherings. These little snowmen will brighten up your holiday spread and make people smile. They make a wonderful sweet treat that everyone will enjoy.

Ingredients

14 oz. white chocolate
3/4 c. plus 1 T. heavy cream
2 t. vanilla
2 t. brandy, optional
pinch of salt
1/2 t. cinnamon
2 c. finely crushed graham crackers or butter cookies
1/2 - 1 c. shredded coconut (or white sprinkles)
2 T. dark chocolate or 1 t. cocoa
colored sugar paste, for decoration

Melt white chocolate with cream in the microwaves or in a double boiler.
Add vanilla, brandy and salt; stir to combine.

Mix cookie crumbs with cinnamon; add to the white chocolate mixture.

Transfer 1/4 c. white chocolate mixture in a separate bowl.

Melt dark chocolate in the microwave or in a double boiler; mix them together. (Or you can just mix the cocoa with the white chocolate mixture.)

Refrigerate the 2 mixtures for 1-2 hours until firm.

Put the shredded coconut on a plate; form white chocolate mixture into walnut sized balls; cover balls with the coconut. Form smaller balls for the heads; cover with the coconut.

Place one small ball over the larger one; secure with a toothpick, letting the toothpick protrude a little, to secure the hats.

With the dark chocolate mixture, form little balls the size of a large chickpea; flatten them out to form small discs; place over the heads.

Make a cylinder about half an inch in diameter; cut 1 inch pieces. Place on top of the discs to form the hats. If the chocolate mixture becomes too soft, place it in the refrigerator for 10 minutes to harden.

Make the noses and eyes with black and yellow sugar paste. Poke holes with a toothpick and place them inside the holes.

Serve.

Makes 10-12 snowmen.

They will keep refrigerated for 4-5 days.

***Warning: Tell your guests that the snowmen are secured with toothpicks. Swallowing a toothpick is very dangerous!
