Make a yummy, delicious dessert that's simple to make. These bars are soft and buttery, are filled with maraschino cherries and then drizzled with a maraschino cherry glaze.
Cherry Bars:
1 c. sugar
1 c. butter or margarine
1 egg
1 t. vanilla
1/2 t. almond extract
2 1/4 c. flour
1/8 t. salt
3/4 c. chopped maraschino cherries
Glaze:
1/2 c. powdered sugar
1-2 t. maraschino cherry juice
Cream sugar and butter in a mixing bowl until smooth and creamy. Beat in egg, vanilla and almond extracts. Stir in flour and salt; stir in cherries.
Chill for at least 30 minutes or until no longer sticky.
Preheat oven to 350 degrees.
Periodically dip hands into water to prevent dough sticking to hands while patting dough into a lightly greased 15 x 10 inch jelly roll pan.
Bake for 15-18 minutes. Cool completely. Drizzle with glaze.
Glaze:
Combine powdered sugar and enough cherry juice until you get the right consistency.
Makes 3 dozen.
Tip: Make sure to chill the dough at least a little bit, or it will be a sticky mess trying to spread it in the pan!
