Description
Clean up is a snap with these chicken dinner foil packets. They don't take long to prepare either which makes them a fantastic meal to make on busy weeknights. But the best thing is that they are delicious.
Ingredients
- 1 3/4 c. warm water
- 2 c. instant brown rice, uncooked
- 4 small boneless, skinless chicken breast (about 1 lb. total)
- 1/4 cup KRAFT Lite Ranch Dressing
- 1-1/2 t. chili powder
- cumin, to taste
- salt and pepper, to taste
- 1/2 c. KRAFT 2% milk shredded sharp Cheddar cheese
- 1 red pepper, chopped
- 4 c. small broccoli florets (or 10 oz. frozen corn, thawed)
- more desired seasonings, to taste, optional
Steps
- Preheat oven to 400 degrees. Cut 4 large pieces of heavy duty aluminum foil; spray with non-stick cooking spray.
- Combine water and rice; let stand 5-10 minutes.; evenly divide and spoon the water and the remaining water onto centers the aluminum foil; top with remaining ingredients.
- Fold to make 4 packets; place on a rimmed baking sheet.
