This awesome and colorful cake is pretty and a fun one to serve guests. It's delicious and gets is great flavor and color from the cherries.
Cake:
15.25 oz. package white cake mix
3.5 oz. cherry jello mix
3/4 c. vegetable oil
3/4 c. buttermilk
3 large eggs
1 t. vanilla extract
Frosting:
8 oz. can crushed pineapple, with juices
3.4 oz. package instant vanilla pudding mix
16 oz. container frozen whipped topping, thawed
8 oz. jar maraschino cherries, halved, juices reserved
Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.
In a large bowl, beat cherry jello mix, oil, buttermilk, eggs and vanilla extract into white cake mix until just combined; pour into prepared baking dish.
Bake for 30-35 minutes, or until wooden toothpick inserted in center comes out mostly clean. Remove from oven; let cool.
Frosting: Place crushed pineapple, with juices, and maraschino cherries in a large bowl; sprinkle pudding mix on top. Fold in whipped topping and 1/4 c. cherry juice until smooth and combined, adding more cherry juice, if desired. Frost cake. Refrigerate for 2-3 hours, or until set.
Garnish with maraschino cherries, if desired.
