This is a delicious, healthy salad that is made with your own homemade vinaigrette. Serve it as the main dish, a side dish or as a salad.
Salad:
2 cans garbanzo beans, rinsed and drained
cherry tomatoes
broccoli
red onion
celery
carrots
green olives
feta
fresh basil
grilled chicken, just grilled with salt and pepper (or leftover or rotisserie chicken)
* or add whatever veggies are desired
Vinaigrette:
2 T. olive oil
3 T. red wine Vinegar
1 T. Dijon mustard
freshly squeezed juice from ½ of a lemon
red pepper flakes
salt and pepper
Salad:
Dump all ingredients in a bowl in amounts depending on personal preference.
Vinaigrette:
Mix together vinaigrette ingredients.
Add dressing into salad; toss.
Serve.
