Description
This is a delicious, healthy salad that is made with your own homemade vinaigrette. Serve it as the main dish, a side dish or as a salad.
Ingredients
- Salad:
- 2 cans garbanzo beans, rinsed and drained
- cherry tomatoes
- broccoli
- red onion
- celery
- carrots
- green olives
- feta
- fresh basil
- grilled chicken, just grilled with salt and pepper (or leftover or rotisserie chicken)
- * or add whatever veggies are desired
- Vinaigrette:
- 2 T. olive oil
- 3 T. red wine Vinegar
- 1 T. Dijon mustard
- freshly squeezed juice from ½ of a lemon
- red pepper flakes
- salt and pepper
Steps
- Salad:
- Dump all ingredients in a bowl in amounts depending on personal preference.
