Bacon makes everything better and that definitely includes these carrots. They are tender on the inside and the bacon is crispy and caramelized on the outside.
3 lb. whole carrots
1 1/2 lb. bacon
1/2 c. real maple syrup
salt and pepper, to taste
Preheat an indirect grill, smoker or oven to 400 degrees.
Thoroughly scrub and peel carrots.
Wrap each carrot in a piece of bacon, overlapping and tucking in the ends to secure them. Sprinkle each carrot with salt and pepper.
Place the wrapped carrots on the grill grates or on a baking sheet, if using the oven. Close the grill's lid; cook for 25-30 minutes or until bacon is golden and crispy.
During the last 5 minutes of grilling, brush carrots with the maple syrup; grill until syrup starts to bubble. Remove from the grill. Place on a platter.
Serve hot.
