If you like strawberry shortcake, you'll like strawberry tiramisu as well. It's easy to make. The hardest part is waiting to serve it.
24 lady fingers
½ c. orange juice
3 c. strawberries, sliced
1/4 c. water
½ c. sugar
1 c. whipping cream
1 c. mascarpone cheese
Strawberry sauce:
Heat 1 c. sliced strawberries over medium heat with 1/4 c. water. When mixture begins to boil, add 1/4 c. sugar; let simmer for 5 minutes, stirring occasionally. Remove from heat. Use a food processor to blend to a liquid. Set strawberry sauce aside.
Whip the cream together with the sugar until there are soft peaks; mix this with the mascarpone until there is a smooth mixture.
Mix the orange juice with the strawberry sauce; dip the ladyfingers in the mixture.
Make a layer of the ladyfingers in the bottom of a serving or trifle bowl; add a layer of the mascarpone/cream mixture; repeat ladyfingers and mascarpone mixture.
Place in the refrigerator for 2-4 hours or overnight before placing on the final layer of strawberries.
Serve immediately.
