You won't be able to resist this amazing cauliflower side dish. The sweet Italian dressing, feta cheese, brown butter and garlic crouton crumbs provide a wonderful flavor that just takes it to a new level.
2 lb. head cauliflower, cut into florets
5 T. butter, divided
salt and freshly ground black pepper
1/3 c. Marzetti Sweet Italian dressing, divided
3/4 c. crushed Texas Toast Garlic and Butter Croutons
1 t. minced garlic
1 T. freshly squeezed lemon juice
4 oz. feta cheese, crumbled
a few gratings of lemon zest
2 T. chopped fresh parsley
Preheat oven to 400 degrees. Spread 1 T. softened butter over the bottom of a parchment lined baking sheet pan; set aside.
Cut cauliflower into florets; place in a large bowl; gently toss with 3 T. of dressing, salt and pepper.
Scatter seasoned florets evenly over pan; roast 12 - 15 minutes or until golden brown. Turn pieces over; roast 10-15 minutes or until other side is golden brown and easily pierced with a knife.
Brown Butter Garlic Crumbs:
While cauliflower is roasting, melt 4 T. butter in a heavy skillet over medium heat; continue to cook butter after it is melted until it's slightly brown and smells toasty. Add crushed croutons, garlic, salt and pepper; cook, stirring frequently for about 5-10 minutes until crumbs are a shade darker.
Assembly:
Place cauliflower florets in a bowl; toss gently with lemon juice, remaining dressing, salt and pepper, to taste. Spoon crumbs and feta over cauliflower.
Serve warm or room temperature in a low serving dish or bowl, garnished with lemon zest and parsley.
