Although this is an appetizer, it could easily be served as a light meal. It makes a wonderful, easy appetizer for your next party or gathering.
1 T. olive oil
1 lb. ground beef
4 oz. cream cheese
1 c. salsa
1 T. taco seasoning
1 bag tortilla chips, white corn tortilla chips or a flavored Dorito chip*
2 1/2 c. Mexican blend shredded cheese
1 red bell pepper, diced
1 T. cilantro, optional
Heat oil in a skillet. When warm, add ground beef; cook until browned; discard excess fat. Season with taco seasoning; add cream cheese and salsa; stir until cream cheese is melted and well combined.
Preheat oven to 375 degrees.
Layer in n a 9x13 inch casserole dish: tortilla chips, beef and shredded cheese. Repeat once more; place in preheated oven for 10-15 minutes until cheese is melted. Remove from oven.
Serve hot, topped with diced bell pepper and cilantro, if desired.
12 appetizer servings.
*If using a flavored Dorito chip, use less taco seasoning.
