Whether serving these for a holiday dinner or a weeknight meal, these carrots are deliciously sweet and tender. They are full of wonderful ingredients like garlic, butter and Parmesan cheese.
non-stick cooking spray
2 lb. carrots, scrubbed, diagonally cut into about 3-inch pieces (peel only if desired)
4 T. butter
4 cloves garlic, minced
1 t. Italian Seasoning
1/4 t. salt
1/4 t. freshly ground pepper
1/3 c. grated Parmesan cheese
1/4 c. chopped fresh parsley
Preheat oven to 425 degrees.
Line a rimmed baking sheet with aluminum foil; spray with cooking spray; set aside.
Place carrots in a large mixing bowl; set aside.
Melt butter in the microwave; add garlic, Italian Seasoning, salt and pepper; whisk until thoroughly combined. Pour mixture over the carrots; toss to coat. Add Parmesan cheese; mix until combined.
Transfer carrots to prepared baking sheet. Bake for 20 - 25 minutes, or until tender. Stir half way through cooking. Remove from oven.
Taste and adjust seasonings. Sprinkle with parsley. Serve.
6 servings.
Leftovers will keep in the refrigerator for 2 days.
Tip: To make in advance: Roast carrots in the oven 1-2 days in advance, then keep them in the refrigerator in an airtight container. When ready to serve, spread carrots on a rimmed baking sheet and reheat in a 425 degree oven for 5 minutes.
