It's grilling season and who says that it's only meat that should be grilled? These grilled apples are yummy and so easy and quick to make. They make a perfect dessert for those summer gatherings.
4 medium tart apples, cored
1/3 c. raisins
1/3 c. sweetened, shredded coconut (toasted, if desired)
1/4 c. packed brown sugar
1/2 t. ground cinnamon
Preheat grill to medium heat.
Place each cored apple on a 12 x 12 inch piece of heavy-duty aluminum foil.
Combine raisins, coconut, brown sugar and cinnamon; spoon into center of apples. Fold foil over apples; seal tightly.
Grill, covered, over medium heat for 20-25 minutes or until apples are tender.
Open foil carefully to allow steam to escape.
