If you are one who loves all things lemon, then you'll love these bars. In a little over an hour, you'll have a wonderful, fresh dessert than would also be great for breakfast with a cup of coffee.
15.25 oz. box yellow-butter cake mix
2 c. old fashioned oats
1 c. butter, melted
1/2 c. freshly squeezed lemon juice from 2 - 3 lemons
14 oz. can sweetened condensed milk
Preheat oven to 350 degrees. Lightly spray an 8 x 8 inch baking dish with non-stick cooking spray.
In a large bowl, combine cake mix, oats and butter; stir until well combined. Pour about half of the mixture into the bottom of the baking dish; press out evenly. Bake for 20 minutes.
While baking, combine lemon juice and sweetened condensed milk in a small bowl; stir until thickened.
Once the crust is done, pour lemon mixture over it; spread evenly. Crumble remaining cake mix mixture evenly over the lemon mixture.
Bake for 30 minutes or until just starting to brown. Cool completely before slicing.
9 servings.
Store in the refrigerator.
