Description
You may have your own broccoli salad, but you still need to try this one for sure. It's delicious with the creamy dressing and a little orange zest. You'll the combination or sweet, savory and crunchy.
Ingredients
- Broccoli Cranberry Salad:
- 1 bunch broccoli, chopped into small florets
- 1/4 c. red onion, sliced
- 1/2 c. dried cranberries or sugar-free dried cranberries
- 1/2 c. walnuts, chopped (or pumpkin seeds)
- 1/2 c. bacon bits, cooked
- Creamy Lemon Poppy Seed Dressing:
- 1/2 c. mayonnaise
- 1 T. olive oil
- 1 T. freshly squeezed lemon juice
- 1 t. orange zest
- 1/2 t. garlic powder
- 1 1/2 T. sweetener of choice
- 1/2 t. poppy seeds, optional
- sea salt, to taste
- black pepper, to taste
Steps
- Combine broccoli, red onion, cranberries, walnuts and bacon in a large bowl.
- In a small bowl, whisk together mayonnaise, olive oil, lemon juice, garlic powder, orange zest, sweetener and poppy seeds. Adjust sweetener, to taste; season with sea salt and pepper, to taste. Stir dressing into mixture. Refrigerate 1 hour for better flavor, if desired.
- 10 one half cup servings.
