Although this salad is great for a get together, you don't need to save it for company. It's really easy and quick to prepare. You'll love the fresh combination of cucumber, watermelon and mozzarella.
8 oz. fresh mozzarella balls in water, drained
3 T. olive oil
freshly squeezed juice from 1 lemon
freshly squeezed juice from 1 lime
2 T. chopped fresh basil, plus extra for garnish
2 garlic cloves, minced
1/4 t. dried oregano
1/4 t. salt
1/4 t. pepper
1/4 t. crushed red pepper flakes
2 c. watermelon balls from 1/2 large watermelon
1 1/2 c. cucumber balls from 3 seedless cucumbers
Place mozzarella balls in a large bowl.
In a smaller bowl, whisk together olive oil, lemon and lime juices, basil, garlic, oregano, salt and pepper; pour over mozzarella. Place in refrigerator while using a melon baller about the same size as the mozzarella balls, to scoop out watermelon and cucumbers.
Place watermelon and cucumber balls in a large bowl; pour mozzarella balls and all dressing contents in with the melon; toss well.
Refrigerate for at least 1 hour.
Serve, garnished with fresh basil and herbs; toss well.
