Broccoli, Cauliflower and Apple Salad with Bacon

Description

This salad will be a hit with family or friends. Take it to any function and you will not come home with any leftovers. If you will be serving any vegetarians, serve the bacon on the side as a garnish.

Ingredients

2 c. coarsely chopped fresh broccoli florets
1 c. coarsely chopped fresh cauliflower florets
2 medium carrots, chopped
1/2 c. dried cranberries (or raisins)
1 medium red apple, chopped
1 medium Granny Smith apple, chopped
2 T. freshly squeezed lemon juice, divided
1/2 c. mayonnaise
2 T. maple syrup (or honey)
1 lb. sliced maple-flavored bacon, cooked and crumbled
1/2 c. sunflower kernels

In a large bowl, combine broccoli, cauliflower, carrots and cranberries. Toss apples with 1 T. lemon juice; add to vegetable mixture; toss.

In a small bowl, whisk mayonnaise, maple syrup and 1 T. lemon juice; stir into vegetable mixture. Cover; refrigerate for at least 1 hour.

Just before serving, stir in bacon and sunflower kernels.
