Ingredients
- Tzatziki Sauce:
- 1/4 c. fresh dill, chopped
- 1/4 English cucumber, grated with excess moisture squeezed out
- 2 c. full-fat Greek yogurt
- different types of herbs like dill, basil, chives, cilantro or parsley, optional
- 3-4 garlic cloves, minced
- zest of 1 lemon
- freshly squeezed juice of 1 lemon
- sea salt
- freshly ground black pepper, to taste
- 1 1/2 lb. boneless, skinless chicken breasts
- 1 1/2 c. cherry or grape tomatoes, halved or quartered
- 1 English cucumber, diced
- 1/3 c. pitted Kalamata or favorite olives, sliced
- 1 medium red onion, diced
- 1 c. crumbled Feta cheese
Steps
- Tzatziki Sauce:
- Mix all Tzatziki ingredients in a bowl; season with salt and pepper, to taste. Refrigerate until ready to use. (It tastes the best if made a day in advance so that all of the flavors meld together.)
