These bright and fun cupcakes make a festive way to celebrate birthdays, St. Pat's day or anytime you want a great cupcake.

Ingredients

• Cake:
• 18 oz. box lemon cake mix
• 3 1/2 oz. box lemon pudding mix
• 4 eggs
• 1 1/4 c. Mountain Dew soda
• 1/2 c. vegetable oil
• 3 -5 drops yellow food coloring
• Frosting:
• 4 c. powdered sugar
• 1 c. salted butter, at room temperature
• 1/8 c. Mountain Dew soda
• 1/2 T. freshly squeezed lemon juice
• 1/2 T. freshly squeezed lime juice
• 3 -5 drops neon green food coloring

Steps

1. Cake:
2. Preheat oven to 350 degrees.
3. Mix together cake mix, pudding mix and eggs well. Add in oil to batter: mix for 2 minutes. Slowly pour in soda; mix for 1 minute. Pour or spoon into cupcake liners. Bake for 13-17 minutes or until wooden toothpick inserted comes out clean.
