Mountain Dew Cupcakes With Frosting

These bright and fun cupcakes make a festive way to celebrate birthdays, St. Pat's day or anytime you want a great cupcake.

Ingredients

Cake:
18 oz. box lemon cake mix
3 1/2 oz. box lemon pudding mix
4 eggs
1 1/4 c. Mountain Dew soda
1/2 c. vegetable oil
3 -5 drops yellow food coloring

Frosting:
4 c. powdered sugar
1 c. salted butter, at room temperature
1/8 c. Mountain Dew soda
1/2 T. freshly squeezed lemon juice
1/2 T. freshly squeezed lime juice
3 -5 drops neon green food coloring

Cake:
Preheat oven to 350 degrees.

Mix together cake mix, pudding mix and eggs well. Add in oil to batter: mix for 2 minutes. Slowly pour in soda; mix for 1 minute. Pour or spoon into cupcake liners. Bake for 13-17 minutes or until wooden toothpick inserted comes out clean.

Let cool before frosting.

Frosting:
Beat butter well until smooth; slowly add in 1 c. powdered sugar at a time; add lemon and lime juices, soda and food coloring.

If frosting is too thick, add a teaspoon at a time of mountain dew till you reach the correct consistency to pipe or frost cupcakes.
