This is the perfect salad to make for a potluck, BBQ, or any gathering. It's so easy to prepare but tastes best when allowing enough time for the tangy, creamy dressing to chill for the best flavor.
3/4 c. mayonnaise
1/4 c. sour cream
1 T. red or white wine vinegar
2 t. Italian seasoning
1 t. olive oil
2 cloves garlic, minced
1/2 t. salt
1/4 t. black pepper
1/8 t. sugar
3 large cucumbers, thinly sliced
1 medium red onion, thinly sliced
Dressing:
In a medium bowl, whisk together mayonnaise, sour cream, vinegar, Italian seasoning, olive oil, garlic, salt, pepper and sugar. For best results, cover and chill dressing for at least 1 hour or up to 24 hours before preparing the salad.
Thinly slice cucumbers and red onions about 1/8 to 1/4 inch thick.
Stir the dressing together with the onion and cucumber. Serve immediately, or chill until ready to serve.
8 servings.
*This salad tastes best when the dressing is made in advance and chilled for at least 1 hour and up to 24 hours before serving. Once the salad is assembled, it can be chilled for another 1-2 days before serving, if desired.
