In just a few minutes you can have a healthy, creamy and delicious dressing to put on any salad.
1 large avocado, peeled and pitted
1 clove garlic, peeled
1/2 T. freshly squeezed lime or lemon juice
3 T. olive or avocado oil
1/4 t. kosher salt, or to taste
1/4 t. black pepper, or to taste
water, as needed (up to 1/4 c.)
In a mini food processor, add garlic, avocado, lime or lemon juice, olive oil, salt and pepper. Process until smooth, stopping to scrape down the sides a few times. Thin out with a little bit of water until it reaches desired consistency.
Store in an airtight container for at least 1 week, but 3 - 4 days is best.
Makes 1 cup.
