There's no need to buy pasta salad when you can make your own quickly and easily and it's more delicious. It's great for gatherings, picnics, reunions, pool parties and can be served at room temperature or right out of the refrigerator.
Orzo Salad:
1 1/2 c. uncooked orzo pasta
1 1/2 c. diced cucumbers
1 1/2 c. halved cherry or grape tomatoes
2/3 c. diced red onions
2/3 c. sliced Kalamata or black olives
1 c. crumbled feta cheese
Vinaigrette:
1/3 c. red wine vinegar
2 t. freshly squeezed lemon juice
2 t. minced fresh garlic
2 t. dried oregano
1 t. sugar
1/2 c. olive oil
Bring a large pot of well salted water to a boil; add orzo; cook until al dente, about 8 - 10 minutes. Drain; transfer to a large bowl.
Add cucumbers, tomatoes, onions, olives and feta cheese to the bowl.
Vinaigrette:
In a small bowl, whisk together vinegar, lemon juice, garlic, oregano and sugar. While whisking, stream in olive oil; season to taste with salt and pepper.
Add dressing to the pasta; toss.
Serve immediately at room temperature or cover with plastic wrap and refrigerate until ready to serve.
