Take cauliflower to a higher level with a white sauce made from butter, flower, milk and some seasonings. It's so good, it could be saved for holidays and special occasions.
1 medium head cauliflower
4 T. butter
3 T. flour
1 c. milk
1/4 t. paprika
1/3 t. salt and pepper, or to taste
3 T. chopped parsley, for garnish
Discard leaves from cauliflower; rinse cauliflower under cold water. Cut out florets with a sharp knife; discard stem.
Boil florets in well salted water for 15 - 20 minutes. While florets are cooking, make the white sauce.
Preheat oven to 325 degrees.
White sauce: Melt butter on low heat; add flour; stir until blended; add milk; stir until smooth and thickened. Remove from heat; add seasonings.
Drain cauliflower; place florets in a greased casserole dish. Pour white sauce over this. Garnish with bread crumbs with butter. Bake for about 30 minutes.
Serve, garnished with chopped parsley, if desired.
4-6 servings.
