Loaded Mashed Potato Puffs

Description

French fries and tater tots, move over. These mashed potato puffs are so delicious and easy to make, you'll wonder why it took you so long to make them.

Ingredients

2 c. mashed potatoes (leftover mashed potatoes are great to use)
3 large eggs, beaten
1 c. shredded Cheddar cheese
1/4 c. bacon bits or 4 slices bacon, cooked and crumbled
1/4 c. freshly chopped chives
freshly ground black pepper, to taste
1 t. granulated garlic
1/4 c. shredded or grated Parmesan cheese
Optional garnishes: sour cream, chives, crumbled bacon

Preheat oven to 400 degrees. Grease muffin pans to hold 12 puffs.

Combine mashed potatoes, eggs, Cheddar cheese, bacon and chives; season with black pepper, to taste.

Fill each muffin cup evenly with potato mixture; sprinkle each cup with Parmesan cheese. Bake for 30-35 minutes or until golden brown.

Remove from oven; cool for 5 minutes.

Serve immediately with garnishes of choice.

Makes 12.
