Apple Crisp Stuffed Apples

Description

Don't bother with making apple crisp when you can make this easy dessert inside the apples. It makes a great dessert, but some may decide to eat it for breakfast.

Ingredients

5 large apples (Granny Smith, Jonagold or Honey Crisp)
2 T. granulated sugar
1 t. cornstarch
1 t. lemon juice
1 t. vanilla extract
½ t. ground cinnamon
⅛ t. ground nutmeg
⅛ t. kosher sea salt

Streusel Topping:
¼ c. all-purpose flour
¼ c. old fashioned oats
¼ c. brown sugar
½ t. ground cinnamon
¼ t. baking powder
⅛ t. kosher sea salt
3 T. unsalted butter, cold

Optional Toppings:
vanilla ice cream
caramel topping
nuts

Preheat oven to 375 degrees. Line a small baking sheet or 8x8 inch pan with parchment paper, foil or a silicone mat; set aside.

Cut off the tops of 4 apples; use a knife to core the apples to create a bowl; use a spoon or scoop to dig out the insides, reserving the insides and cutting into chunks. Peel and cut the remaining apple into ¼-in. to ½-in. chunks.

In a medium bowl, combine apple chunks, sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg and salt; mix until combined. Spoon filling into the apples.

In a small bowl, whisk together flour, oats, brown sugar, cinnamon, baking powder and salt; use a pastry blender to cut in the cold butter until small clumps form to about a pea size. Sprinkle the streusel over top.

Place the apples onto the baking sheet or prepared pan. Bake for 30 to 40 minutes or until crust is browned and filling is bubbly. (If needed, tent tops with aluminum foil halfway through to prevent from over-browning).

Remove from oven; cool for 10 minutes before serving.

Top with vanilla ice cream, caramel sauce and nuts, if desired.
