Need to make a great tasting salad in a hurry that will feed a crowd? Then try this Mexican inspired vegetarian salad that's a great one to serve at gatherings.
Ingredients
- 4 c. torn romaine lettuce
- 1 medium red onion, thinly sliced
- 1 large cucumber, halved and sliced
- 3 medium tomatoes, chopped
- 2 medium ripe avocados, sliced or cut into 1/2 inch chunks
- 1 large green bell pepper, chopped or sliced
- 1 sweet red pepper, chopped or sliced
- 1 1/2 c. mayonnaise
- 1/4 c. canned chopped green chiles
- 2 t. chili powder
- 1/2 t. onion powder
- 1/4 t. salt
- 1/4 t. garlic powder
- 1 c. crushed tortilla chips
- 1/2 c. shredded Cheddar cheese
Steps
- In a 2 quart trifle or glass serving bowl, layer the fresh vegetables.
- In a small bowl, mix mayonnaise, chiles and seasonings; spread over top of the layered fresh veggies.
- Just before serving, sprinkle with crushed tortilla chips and shredded Cheddar cheese.
