Need to make a great tasting salad in a hurry that will feed a crowd? Then try this Mexican inspired vegetarian salad that's a great one to serve at gatherings.
4 c. torn romaine lettuce
1 medium red onion, thinly sliced
1 large cucumber, halved and sliced
3 medium tomatoes, chopped
2 medium ripe avocados, sliced or cut into 1/2 inch chunks
1 large green bell pepper, chopped or sliced
1 sweet red pepper, chopped or sliced
1 1/2 c. mayonnaise
1/4 c. canned chopped green chiles
2 t. chili powder
1/2 t. onion powder
1/4 t. salt
1/4 t. garlic powder
1 c. crushed tortilla chips
1/2 c. shredded Cheddar cheese
In a 2 quart trifle or glass serving bowl, layer the fresh vegetables.
In a small bowl, mix mayonnaise, chiles and seasonings; spread over top of the layered fresh veggies.
Just before serving, sprinkle with crushed tortilla chips and shredded Cheddar cheese.
