There's no need to slave in the kitchen making baked potato soup. Let your slow cooker do the work for you and use frozen hash browns, frozen chopped onions and packaged bacon bits to save you time. No one will ever know that you took a shortcut.
1 bag frozen hash browns
1 c. water
32 oz. chicken stock/broth
1/2 c. frozen chopped onions (or fresh onion)
1 c. milk
3 T. flour
1 c. shredded Cheddar cheese
1/2 c. packaged real bacon bits or cooked chopped bacon
To the slow cooker, add hash browns, water and stock/broth; stir. Cook on Low for 6-8 hours.
Stir together onions, milk and flour in a small bowl; add to slow cooker; stir and cook 30 more minutes on High to thicken soup.
Blend with blender if desired, for a creamier soup.
Serve, topped with Cheddar cheese and bacon bits.
