These scrumptious cake bars start out with a layer of Devil's Food cake, then a peanut butter filling and all topped with a chocolate frosting. Yum!
1 Devil's Food cake mix, just powder mix, not other ingredients listed on the box
1/3 c. butter, melted
1 egg
3/4 c. peanut butter (plain or crunchy)
2 t. vanilla
3 c. powdered sugar
1/2 c. whipping cream
1-2 T. milk, for thinning, only if necessary
1 can store-bought chocolate frosting
Preheat oven to 350 degrees. Line a 9x13 baking dish with parchment paper that has been lightly sprayed with non-stick cooking spray.
In a very large bowl, mix together cake mix, butter and egg until a dough forms. Press dough evenly onto the prepared dish. Bake for 12 minutes.
Cool completely in pan.
In a large bowl, combine peanut butter and vanilla; beat with an electric mixer on medium speed for 30 seconds. Add powdered sugar and whipping cream; beat until smooth, scraping bowl occasionally. If mixture is too thick, add 1-2 T. additional milk to thin it.
Spread mixture evenly over the cooled cake mix crust. Place in the refrigerator while preparing the ganache, if making your own. Or you can heat store-bought chocolate frosting in the microwave for 30 seconds to soften a bit.
Spread frosting over the peanut butter layer. Refrigerate for 2-3 hours, or until frosting is set and peanut butter layer is chilled.
Cut into 12-16 bars.
Serve.
